cruizba c4b0ce1cd1 openvidu-deployment: add ALLOY_IMAGE to install and update scripts ... Add the ALLOY_IMAGE env var (docker.io/grafana/alloy:v1.17.0) alongside the existing PROMTAIL_IMAGE in all deployment install scripts and update.sh, and pass it through to the installer/updater containers.
